  • 8 cups water
  • ½ cup (60g) baking soda
  • 1 tablespoon salt (for boiling water)
  • 1 large egg, beaten with 1 tablespoon water (for egg wash)
  • 2 tablespoons unsalted butter, melted
  • ½ cup (120g) granulated sugar
  • 1 teaspoon cinnamon
  • 8 oz (225g) full-fat cream cheese, softened
  • 23 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • 12 cups powdered sugar
  • Pinch of salt (for dip)

Instructions

  1. Preheat oven to 425°F (220°C). Line two baking sheets with parchment paper.
  2. In a large pot, combine 8 cups water, ½ cup baking soda, and 1 tablespoon salt. Bring to a rolling boil, then reduce to a gentle simmer.
  3. Prepare the cinnamon sugar by mixing granulated sugar and cinnamon in a shallow dish.
  4. Prepare the dip by beating softened cream cheese until smooth. Add heavy cream, vanilla extract, and a pinch of salt. Gradually beat in powdered sugar until desired consistency is reached. Set aside.
  5. Separate biscuit dough into individual biscuits. Cut large biscuits into quarters or eighths to create bite-sized pieces. Roll into rough balls.
  6. Carefully lower 4-5 dough balls into the simmering baking soda water. Boil for 30 seconds, flip, and boil for another 30 seconds.
  7. Remove boiled dough with a slotted spoon and place on prepared baking sheets.
  8. Brush the boiled dough balls generously with the egg wash.
  9. Bake for 12-15 minutes until deep golden brown.
  10. Immediately remove from oven and brush with melted unsalted butter while hot.
  11. Roll the buttered bites in the cinnamon sugar mixture to coat evenly.
  12. Serve warm with the sweet vanilla dip.

Notes

Do not skip the boiling step; it creates the authentic pretzel crust and chew. Ensure the water is simmering, not violently boiling, to prevent tearing the dough. Use room temperature cream cheese for a smooth dip. These are best served warm.
