Description
A simple, beginner-proof one-pot meal featuring ground beef, white rice, and taco seasoning. It’s hearty, cheap, and requires minimal cleanup.

- 1 pound (450g) ground beef (80/20 lean-to-fat ratio)
- 1 cup (185g) long-grain white rice
- 2 cups (480ml) low-sodium beef broth
- 1 can (14.5 oz / 411g) diced tomatoes (in juice)
- 1 packet (1 oz) taco seasoning
- 1 cup (100g) shredded cheddar cheese (optional)
- Salt and pepper to taste
Instructions
- Heat a large skillet over medium-high heat. Add ground beef and break it into small crumbles with a wooden spoon. Cook until no longer pink, about 5-7 minutes.
- Sprinkle taco seasoning over the beef and stir to coat. Cook for 30 seconds to toast the spices.
- Add uncooked rice, diced tomatoes (with juice), and beef broth. Stir to combine and ensure rice is submerged in liquid.
- Bring the mixture to a boil, then reduce heat to low. Cover tightly with a lid and simmer for 18-20 minutes without lifting the lid.
- Remove from heat and let sit covered for 5 minutes to allow rice to finish absorbing liquid and become fluffy.
- Remove lid, fluff rice with a fork, and top with shredded cheddar cheese. Serve immediately.
Notes
Do not stir the rice while it is simmering to prevent gumminess. Use low-sodium broth to control saltiness. If rice is still hard after 20 minutes, add 2 tablespoons of water and cook for 2 more minutes. Leftovers can be stored in the fridge for up to 4 days and reheated with a splash of water or broth.
