- 1 cup milk (almond, oat, or dairy)
- 1 teaspoon vanilla extract
- 1–2 tablespoons sweetener (maple syrup, honey, or agave)
- 1/2 cup fresh or frozen berries
- Optional: granola, chopped almonds, or coconut flakes for topping
Instructions
- In a jar or container, combine 1/4 cup chia seeds, 1 cup milk, 1 teaspoon vanilla extract, and 1-2 tablespoons sweetener.
- Stir vigorously with a whisk or fork to ensure chia seeds are fully dissolved and not clumped.
- Let the mixture sit for 5 minutes, then stir again to break up any clumps that formed.
- Cover the jar and place it in the refrigerator for at least 4 hours, preferably overnight (8-12 hours).
- In the morning, give the pudding a quick stir. If it is too thick, add a splash of milk.
- Top with fresh or thawed frozen berries and optional crunchy toppings like granola or nuts.
- Serve immediately straight from the jar.
Notes
Stirring twice (once immediately and once after 5 minutes) is crucial to prevent clumping. Chia seeds absorb liquid and expand, so the pudding will thicken significantly overnight. It can be stored in the fridge for up to 5 days. Do not freeze as the texture may become watery or grainy upon thawing.
