Overnight Vanilla Chia Pudding with Berries

  • Author: Thea
  • Total Time: 8 hours
  • Yield: 1 serving 1x

Description

A simple, no-cook breakfast made with just three main ingredients. Mix chia seeds, milk, and sweetener, let it sit overnight, and top with fresh or frozen berries for a creamy, healthy start to your day.

Ingredients

Scale
  • 1/4 cup chia seeds (30g)
  • 1 cup milk (almond, oat, or dairy)
  • 1 teaspoon vanilla extract
  • 12 tablespoons sweetener (maple syrup, honey, or agave)
  • 1/2 cup fresh or frozen berries
  • Optional: granola, chopped almonds, or coconut flakes for topping

Instructions

  1. In a jar or container, combine 1/4 cup chia seeds, 1 cup milk, 1 teaspoon vanilla extract, and 1-2 tablespoons sweetener.
  2. Stir vigorously with a whisk or fork to ensure chia seeds are fully dissolved and not clumped.
  3. Let the mixture sit for 5 minutes, then stir again to break up any clumps that formed.
  4. Cover the jar and place it in the refrigerator for at least 4 hours, preferably overnight (8-12 hours).
  5. In the morning, give the pudding a quick stir. If it is too thick, add a splash of milk.
  6. Top with fresh or thawed frozen berries and optional crunchy toppings like granola or nuts.
  7. Serve immediately straight from the jar.

Notes

Stirring twice (once immediately and once after 5 minutes) is crucial to prevent clumping. Chia seeds absorb liquid and expand, so the pudding will thicken significantly overnight. It can be stored in the fridge for up to 5 days. Do not freeze as the texture may become watery or grainy upon thawing.
