- For the Homemade Pumpkin Syrup:
- ½ cup (120g) 100% pure pumpkin puree
- ½ cup (100g) light brown sugar
- 2 tablespoons pure maple syrup
- ½ cup (120ml) water
- 1 teaspoon pumpkin pie spice
- 1 teaspoon pure vanilla extract
- ¼ teaspoon fine sea salt
- For the Pumpkin Cream Topping:
- ½ cup (120ml) cold heavy cream
- 2 tablespoons confectioners’ sugar
- ½ teaspoon pumpkin pie spice
- For the Drink Assembly:
- 2 cups (480ml) strong cold brew coffee
- Ice cubes
- Optional: Extra whipped cream and cinnamon for garnish
Instructions
- In a small saucepan, combine pumpkin puree, brown sugar, maple syrup, water, pumpkin pie spice, vanilla, and salt. Whisk until smooth.
- Place the saucepan over medium heat and stir constantly for 5-7 minutes until the sugar dissolves and the mixture thickens slightly. Do not let it boil vigorously.
- Remove from heat and let the syrup cool completely. It will thicken further as it cools. Transfer to a jar.
- In a medium bowl, combine cold heavy cream, confectioners’ sugar, and ½ teaspoon pumpkin pie spice.
- Using a handheld frother or whisk, beat the mixture until soft peaks form. Ensure the cream is thick enough to hold its shape but still pourable.
- Fill a tall glass with ice cubes.
- Pour in the cold brew coffee, leaving about an inch of space at the top.
- Spoon 2-3 tablespoons of the homemade pumpkin syrup into the coffee and stir gently.
- Spoon the whipped pumpkin cream on top of the coffee.
- Serve immediately with a straw.
Notes
Use 100% pure pumpkin puree, not pumpkin pie filling. Keep all equipment and cream cold for best whipping results. The syrup can be made ahead and stored in the fridge for up to two weeks. For a dairy-free version, use coconut cream instead of heavy cream.
