  • ½ teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1 teaspoon instant espresso powder
  • 4 oz (115g) block cream cheese, softened
  • ¼ cup (55g) butter, softened
  • 2 cups (240g) powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners or grease lightly.
  2. In a large bowl, whisk together pumpkin puree, vegetable oil, sugar, and eggs until smooth.
  3. In a separate medium bowl, whisk together flour, baking powder, baking soda, salt, pumpkin pie spice, cinnamon, and espresso powder.
  4. Pour dry ingredients into wet ingredients. Gently fold together with a spatula until just combined; do not overmix.
  5. Divide batter evenly among cupcake liners, filling them about 2/3 full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
