Chewy, tart, and sweet blondies made in one bowl with white chocolate chips and raspberries. Perfect for weeknights or parties.

- 1 cup (226g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 1 cup (200g) light brown sugar
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- 2 cups (250g) all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 12 ounces (340g) white chocolate chips
- 1 cup (150g) fresh or frozen raspberries
- 1 teaspoon lemon zest (optional)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving a 2-inch overhang on the long sides. Grease lightly.
- Melt the butter in the microwave or saucepan. Let it cool for 2 minutes until warm, not hot.
- In a large bowl, whisk melted butter, granulated sugar, and brown sugar vigorously for 2 minutes until glossy. Add eggs and vanilla; whisk until smooth.
- Add flour, baking powder, and salt. Stir with a spatula until just combined. Do not overmix.
- If using frozen raspberries, toss them in a teaspoon of flour. Gently fold in white chocolate chips and raspberries.
- Pour batter into prepared pan and spread evenly.
- Bake for 30-35 minutes until edges are golden brown and center is set but slightly jiggly. A toothpick should come out with moist crumbs.
- Cool in pan for 10 minutes, then lift out using parchment overhang. Transfer to a wire rack and cool completely before cutting into squares.
Notes
Use room temperature eggs to prevent seizing. If using frozen raspberries, toss in flour to prevent sinking. Do not overmix the batter to ensure chewy texture. Cool completely before cutting for clean slices.
