A forgiving, fast, and rustic fruit galette featuring a flaky butter crust, tart-sweet plums, and toasted almonds. It comes together in under 45 minutes and requires no special equipment or precision.

- 6–8 tablespoons ice water

- 3–4 medium plums (about 1 ½ lbs / 680g), pitted and sliced into ½-inch wedges
- ½ cup (50g) sliced almonds
- 3–4 tablespoons granulated sugar (for filling)
- 1 tablespoon cornstarch
- 1 teaspoon lemon juice
- 1 teaspoon vanilla extract
- 1 tablespoon extra sugar (for sprinkling)
- 1 large egg beaten with 1 tablespoon milk or cream (for egg wash)
Instructions
- In a large bowl, whisk together flour, salt, and 1 tablespoon sugar. Cut in cold butter using a fork or pastry cutter until the mixture resembles coarse crumbs with pea-sized butter pieces.
- Drizzle in ice water one tablespoon at a time, mixing gently until the dough just starts to come together. Do not overmix.
- Divide dough in half, form into disks, wrap in plastic, and refrigerate for at least 30 minutes.
- While dough chills, toss plum slices with granulated sugar, cornstarch, lemon juice, and vanilla extract. Let sit to release juices.
- Preheat oven to 400°F (200°C). Roll one dough disk into a rough 12-inch circle on a floured surface and transfer to a parchment-lined baking sheet.
- Pile plum mixture into the center, leaving a 2-inch border. Sprinkle sliced almonds over the fruit.
- Fold the edges of the dough over the fruit, pleating every 2 inches. Brush exposed crust with egg wash and sprinkle with extra sugar.
- Bake for 35-40 minutes until crust is deep golden brown and fruit is bubbling.
- Let cool on the baking sheet for at least 15 minutes before slicing to allow filling to set.
Notes
Keep butter cold for a flaky crust. Use cornstarch to prevent a soggy bottom. Let the galette cool completely before slicing to ensure clean cuts. Can be made with store-bought pie crust for convenience.
