  • 34 medium plums (about 1 ½ lbs / 680g), pitted and sliced into ½-inch wedges
  • ½ cup (50g) sliced almonds
  • 34 tablespoons granulated sugar (for filling)
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon extra sugar (for sprinkling)
  • 1 large egg beaten with 1 tablespoon milk or cream (for egg wash)

Instructions

  1. In a large bowl, whisk together flour, salt, and 1 tablespoon sugar. Cut in cold butter using a fork or pastry cutter until the mixture resembles coarse crumbs with pea-sized butter pieces.
  2. Drizzle in ice water one tablespoon at a time, mixing gently until the dough just starts to come together. Do not overmix.
  3. Divide dough in half, form into disks, wrap in plastic, and refrigerate for at least 30 minutes.
  4. While dough chills, toss plum slices with granulated sugar, cornstarch, lemon juice, and vanilla extract. Let sit to release juices.
  5. Preheat oven to 400°F (200°C). Roll one dough disk into a rough 12-inch circle on a floured surface and transfer to a parchment-lined baking sheet.
  6. Pile plum mixture into the center, leaving a 2-inch border. Sprinkle sliced almonds over the fruit.
  7. Fold the edges of the dough over the fruit, pleating every 2 inches. Brush exposed crust with egg wash and sprinkle with extra sugar.
  8. Bake for 35-40 minutes until crust is deep golden brown and fruit is bubbling.
  9. Let cool on the baking sheet for at least 15 minutes before slicing to allow filling to set.

Notes

Keep butter cold for a flaky crust. Use cornstarch to prevent a soggy bottom. Let the galette cool completely before slicing to ensure clean cuts. Can be made with store-bought pie crust for convenience.
