  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (100g) granulated sugar (for coating)
  • 1 ½ teaspoons ground cinnamon (for coating)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, beat softened butter, granulated sugar, and brown sugar on medium-high speed for 2-3 minutes until pale, fluffy, and airy.
  3. Add eggs one at a time, beating well after each addition, then mix in vanilla extract until just combined.
  4. In a separate bowl, whisk together flour, cream of tartar, baking soda, and salt.
  5. Gradually add dry ingredients to the wet mixture on low speed, mixing only until no streaks of flour remain.
  6. Cover and chill dough in the refrigerator for at least 30 minutes (optional but recommended).
  7. Mix ½ cup sugar and cinnamon in a shallow bowl. Roll tablespoon-sized dough balls in the mixture to coat.
  8. Place coated dough balls on prepared baking sheets, leaving 2 inches between each.
  9. Bake for 10-12 minutes until edges are set and lightly golden, but centers still look soft.
  10. Let cookies sit on the hot baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Ensure butter is softened but not melted. Do not overbake; cookies continue to cook on the hot pan. Store in an airtight container with a slice of bread to maintain softness. For a thicker crust, double-roll the dough balls in sugar and cinnamon.
