- 1/2 cup (120g) natural, unsweetened smooth almond butter
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1/2 cup (100g) granular sugar-free sweetener (erythritol, allulose, or monk fruit blend)
- 1/2 cup (50g) fine almond flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- Flaky sea salt for topping (optional)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium mixing bowl, whisk together the almond butter, eggs, vanilla extract, and sugar-free sweetener until smooth and creamy.
- Stir in the almond flour, baking soda, and salt until just combined. The dough should be thick and sticky.
- Scoop portions of dough onto the prepared baking sheet, leaving 2 inches between them. Flatten slightly with a palm or fork.
- Press a little flaky sea salt on top of each cookie if desired.
- Bake for 10-12 minutes until edges are lightly golden but centers still look slightly soft.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Ensure almond butter is stirred well before measuring to incorporate separated oil. Do not overbake as almond flour dries out quickly; cookies will firm up as they cool. Dough can be chilled for 15 minutes if too soft to handle. Store in an airtight container at room temperature for 5 days or in the fridge for 2 weeks.
