  • 1 pound (450g) 80/20 lean ground beef
  • 8 ounces (225g) full-fat block cream cheese, cubed
  • 2 cups (200g) sharp cheddar cheese, shredded
  • 1 medium yellow onion, finely diced
  • 1/2 cup (75g) dill pickles, chopped
  • 2 tablespoons sweet relish
  • 1 teaspoon garlic powder
  • 1 tablespoon yellow mustard
  • 2 tablespoons ketchup
  • Salt and black pepper to taste
  • Optional: 1/4 cup crumbled bacon bits
  • Optional: 2 green onions, sliced

Instructions

  1. Heat a large skillet over medium-high heat. Add the ground beef and break it up with a wooden spoon. Cook for 5-7 minutes until browned and crumbled.
  2. Drain excess grease from the beef, leaving a small amount for flavor.
  3. While the beef cooks, dice the onion and chop the pickles.
  4. Add the browned beef, diced onions, chopped pickles, and relish to the slow cooker. Sprinkle in garlic powder, salt, and pepper. Stir to combine.
  5. Add the cubed cream cheese and shredded cheddar cheese to the slow cooker. Pour in the mustard and ketchup. Gently stir to distribute ingredients.
  6. Place the lid on the slow cooker and cook on LOW for 2-3 hours. Stir once halfway through to help the cream cheese melt evenly.
  7. Once the dip is hot, bubbly, and smooth, give it a final stir. Taste and adjust seasoning if needed.
  8. Serve immediately with sturdy chips, pretzels, or crusty bread. Top with optional bacon bits or green onions.

Notes

Do not cook on HIGH heat as it can cause the cheese to separate or become grainy. Shred your own cheese from a block to ensure smooth melting, as pre-shredded cheese contains anti-caking agents. If the dip is too thick, add a splash of milk or cream. This dip does not freeze well due to the dairy content.
