A savory and easy game day snack featuring large white mushrooms stuffed with a rich mixture of Italian sausage, sharp cheddar, and cream cheese. These bite-sized appetizers are perfect for tailgating, parties, or any occasion where you need a crowd-pleasing finger food.
Ingredients
- 24–30 large white mushroom caps (about 1.5 lbs / 680g)
- 1 lb (450g) Italian sausage (mild or hot, removed from casing)
- 8 oz (225g) cream cheese, softened to room temperature
- 1 cup (100g) sharp cheddar cheese, shredded
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and black pepper to taste
- Optional: Red pepper flakes for heat
- Optional: Fresh parsley for garnish
- Optional: Marinara sauce for dipping
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or foil.
- Gently wipe mushroom caps clean with a damp paper towel. Do not rinse. Use a small knife to carefully remove the stems, keeping the caps intact. Chop small stems and reserve for stuffing; save large stems for soup.
- In a small skillet over medium heat, cook the Italian sausage, breaking it into small crumbles. Cook until no longer pink and liquid has evaporated. Drain excess fat if necessary, then let cool slightly.
- In a mixing bowl, combine softened cream cheese, shredded cheddar, cooked sausage, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined and creamy. Adjust consistency with milk if too dry or more cheese/sausage if too wet.
- Press the stuffing mixture firmly into each mushroom cap, packing it in until slightly domed. Place on the prepared baking sheet, spaced apart.
- Bake for 15-18 minutes, or until mushrooms are tender and cheese is bubbly and golden brown. For extra crispiness, broil for the last 1-2 minutes, watching closely.
- Remove from oven and let cool for 2-3 minutes. Garnish with fresh parsley if desired. Serve warm.
