Ingredients

  • 1/2 cup (120ml) heavy cream
  • 2 tablespoons (30g) 100% pure pumpkin puree
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon maple syrup
  • Pinch of salt
  • 1/2 cup (50g) coarsely ground coffee beans (medium-dark roast)
  • 4 cups (960ml) cold filtered water
  • Ice
  • Optional garnish: cinnamon, nutmeg, or extra maple syrup

Instructions

  1. Combine 1/2 cup coarsely ground coffee beans with 4 cups cold water in a jar or cold brew maker. Stir to saturate grounds.
  2. Cover and steep in the refrigerator for 12-24 hours (18 hours is ideal).
  3. Strain the coffee through a fine-mesh strainer lined with cheesecloth into a clean jar. Discard grounds to create cold brew concentrate.
  4. In a small bowl, combine heavy cream, pumpkin puree, pumpkin pie spice, vanilla extract, maple syrup, and salt.
  5. Whisk vigorously or use a milk frother until the mixture is smooth, thick, and holds soft peaks (1-2 minutes).
  6. Fill a tall glass with ice.
  7. Pour 1 cup of cold brew concentrate over the ice (adjust amount based on desired strength).
  8. Slowly spoon the pumpkin cream over the back of a spoon to float it on top of the coffee, creating distinct layers.
  9. Garnish with a pinch of cinnamon or nutmeg and serve immediately.

Notes

Ensure heavy cream is cold before whipping to help it hold peaks. Use coarse ground coffee to prevent bitterness. The cold brew concentrate can be stored in the fridge for up to two weeks. The pumpkin cream is best made fresh but can be stored for up to 2 days. Adjust maple syrup to taste.
