Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine softened butter, granulated sugar, and brown sugar. Mix vigorously for about 2 minutes until smooth and creamy.
- Add the egg and vanilla extract to the butter mixture. Whisk until fully combined and glossy, about 30 seconds.
- Add the flour, baking powder, and salt to the wet ingredients. Stir gently with a wooden spoon or spatula until just combined. Do not overmix.
- Fold in the chocolate chips, reserving a small handful for topping if desired.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them 2 inches apart.
- Bake for 10-12 minutes, or until edges are lightly golden but centers still look soft and puffy.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a cooling rack or serving warm.
