These incredibly fudgy and moist vegan brownies use ripe avocados instead of butter for a rich, decadent texture without the guilt. It’s a simple, one-bowl beginner-friendly recipe that is naturally gluten-free adaptable and tastes purely of chocolate.
Ingredients
- 2 medium ripe avocados
- ½ cup (50g) unsweetened cocoa powder
- ¾ cup (180ml) pure maple syrup
- ¼ cup (60ml) melted refined coconut oil
- 1 teaspoon pure vanilla extract
- 2–3 tablespoons plant-based milk (oat or almond)
- 1 cup (125g) all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon salt
- ½ cup (85g) dairy-free chocolate chips
- 1 tablespoon extra cocoa powder (for dusting pan)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides, and dust with cocoa powder.
- Cut avocados in half, remove pits, and scoop flesh into a medium mixing bowl. Mash until smooth.
- Add melted coconut oil, maple syrup, vanilla extract, and plant-based milk to the mashed avocados. Whisk until the mixture is smooth and resembles thick chocolate pudding.
- Sift flour, baking powder, and salt into the wet mixture. Fold in gently with a spatula until just combined; do not overmix.
- Fold in the dairy-free chocolate chips, reserving a small handful to sprinkle on top.
- Pour batter into the prepared pan and spread evenly. Sprinkle reserved chocolate chips on top.
- Bake for 20-25 minutes. Check at 20 minutes; a toothpick inserted into the center should come out with moist crumbs attached, not wet batter.
- Let brownies cool in the pan for at least 20 minutes to set before lifting out and slicing into squares.
Notes
Ensure avocados are fully ripe (dark green/black flesh) to avoid bitterness. Do not overbake, as vegan brownies continue to set as they cool. For extra fudginess, chill the batter for 30 minutes before baking. Store in an airtight container at room temperature for 3 days or in the fridge for up to 1 week.
