  • 2 large eggs
  • ½ cup (60g) all-purpose flour (or almond flour for keto/GF)
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 23 tablespoons everything bagel seasoning
  • 1 tablespoon butter or olive oil (for brushing)
  • Optional: 1 teaspoon dried herbs (oregano/basil), ¼ cup grated parmesan

Instructions

  1. Blend the cottage cheese in a blender or food processor until completely smooth and creamy, with no visible curds.
  2. Transfer the smooth cottage cheese to a medium mixing bowl and whisk in the eggs until combined.
  3. Add the flour, baking powder, and salt to the bowl. Stir with a spatula or whisk until a thick, uniform batter forms.
  4. Heat a non-stick skillet over medium heat and lightly grease with oil or butter.
  5. Pour about ½ cup of batter into the center of the pan and spread it into a circle using the back of a spoon.
  6. Cook for 3-4 minutes until bubbles form on the surface and the edges look set.
  7. Carefully flip the flatbread. Immediately brush the top with melted butter or olive oil and sprinkle generously with everything bagel seasoning, pressing seeds down gently.
  8. Cook for another 1-2 minutes until the bottom is golden and the seasoning is fragrant.
  9. Remove from heat and serve immediately, or stack with parchment paper between them to prevent sticking.

Notes

Blend cottage cheese until completely smooth to avoid lumpy texture. Cook one flatbread at a time to prevent sticking. Use medium heat; too high burns the outside, too low makes it tough. Season only the second side to prevent burnt seasoning. Can be stored in the fridge for 5 days or frozen for 3 months.
