  • 1 cup finely chopped romaine lettuce
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • Plastic wrap or aluminum foil for rolling

Instructions

  1. In a large mixing bowl, combine the shredded chicken, chopped romaine, grated Parmesan, Caesar dressing, garlic powder, salt, and pepper. Toss until the chicken is thoroughly coated and the mixture has a spreadable, moist consistency.
  2. Lay out the tortillas on a clean surface. If using 8-inch tortillas, you can cut them in half. If tortillas are stiff, microwave them for 10 seconds to soften.
  3. Spread a generous scoop of the chicken mixture (about 1/4 to 1/3 cup) over each tortilla, leaving a 1-inch border at the edges. Distribute the filling evenly from edge to edge.
  4. Place a sheet of plastic wrap under the tortilla. Roll the tortilla up tightly from the bottom edge, using the plastic wrap to help tighten it and remove air pockets. Twist the ends of the plastic wrap like a candy wrapper to lock the shape.
  5. Refrigerate the rolled tortillas for at least 30 minutes (or overnight) to chill and firm up the filling.
  6. Remove the rolls from the fridge and unwrap them. Use a sharp knife to slice each roll into 1-inch pinwheels.
  7. Pack the pinwheels in a lunchbox container. They can be stored in an airtight container in the refrigerator for up to 3 days.

Notes

Chill the rolls for at least 30 minutes before slicing to ensure they hold their shape. Do not freeze these as the lettuce and tortillas will become mushy upon thawing.
