  • Coarse salt and black pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a 9×13 inch baking dish or sheet pan with parchment paper.
  2. Pat salmon fillets dry with paper towels and place them in the prepared dish, skin-side down. Season lightly with salt and pepper on both sides.
  3. In a small mixing bowl, whisk together Dijon mustard, olive oil, minced garlic, lemon zest, and chopped parsley until a smooth paste forms.
  4. Spread a generous layer of the mustard mixture over the top of each salmon fillet.
  5. Bake for 12-15 minutes, or until the salmon flakes easily with a fork and is opaque throughout.
