  • Author: Thea
  • Total Time: 50 minutes
  • Yield: 12 servings 1x

Description

A rich, chewy chocolate fudge cookie baked in a 13×9 inch pan and topped with light, airy whipped cream cheese frosting. Perfect for game day, this forgiving dessert is easy to decorate and serves a large crowd.

Ingredients

Scale
  • 1 cup (226g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 cup (220g) packed brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 ½ cups (315g) all-purpose flour
  • ¾ cup (75g) unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 ½ cups (255g) semi-sweet or dark chocolate chips
  • 8 oz (225g) full-fat cream cheese, softened
  • ½ cup (113g) unsalted butter, softened
  • 34 cups (360-480g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 23 tablespoons heavy cream
  • ½ cup (85g) white chocolate chips, melted
  • Orange gel food coloring

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 13×9 inch baking pan and line with parchment paper.
  2. In a large bowl, beat softened butter, granulated sugar, and brown sugar on medium-high speed until light and fluffy (about 3 minutes).
  3. Beat in eggs one at a time, then add vanilla extract. Scrape down the sides of the bowl.
  4. In a separate bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  5. Gradually add dry ingredients to the wet mixture on low speed until just combined.
  6. Fold in chocolate chips by hand.
  7. Spread dough evenly into the prepared pan, pressing into corners.
  8. Bake for 25-30 minutes until edges are set and center is slightly soft. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. For frosting, beat cream cheese and softened butter until smooth. Add vanilla and powdered sugar gradually.
  10. Increase speed to medium-high and beat until fluffy. Add heavy cream one tablespoon at a time until spreadable.
  11. Spread frosting over cooled cookie. Decorate with melted white chocolate drizzle and orange gel coloring details.
  12. Chill in fridge for 30 minutes before serving to set the frosting.

Notes

Ensure all dairy ingredients are at room temperature for best texture. Do not overbake the cookie as it continues to cook in the pan. Sift cocoa powder to avoid lumps. Use gel food coloring to prevent thinning the frosting. Can be made ahead: bake base a day in advance and frost before serving.
