Description

A simple, no-cook keto snack made with just four ingredients. These creamy, chocolatey fat bombs satisfy sweet cravings without sugar or complex preparation.


Ingredients

  • 1 cup (250g) creamy peanut butter
  • 2 tablespoons (30g) unsalted butter, softened
  • 1/2 teaspoon vanilla extract
  • A pinch of salt
  • 1 cup (170g) semi-sweet sugar-free chocolate chips
  • 1 tablespoon (15ml) coconut oil
  • Optional: Liquid sweetener (stevia or monk fruit) to taste

Instructions

  1. Line silicone molds or a mini muffin tin with parchment paper and place in the freezer for 5 minutes to chill.
  2. In a microwave-safe bowl, combine peanut butter, butter, vanilla extract, and salt. Microwave on high for 30 seconds, stir, and microwave for another 15 seconds if needed until smooth and warm.
  3. Drop about 1/2 to 1 teaspoon of the peanut butter mixture into the bottom of each chilled mold cavity. Smooth the top and return to the freezer for 10 minutes to firm up.
  4. In a separate microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second bursts, stirring vigorously between each burst, until the mixture is completely smooth and glossy.
  5. Remove molds from the freezer. Pour or spoon the melted chocolate over the peanut butter centers, filling each mold to the top.
  6. Use a toothpick to swirl the chocolate and remove any air bubbles. Ensure the peanut butter is fully covered.
  7. Place molds in the freezer for at least 1 hour, or until completely solid.
  8. Pop the fat bombs out of the molds. If they stick, run the mold under warm water for a few seconds. Store in an airtight container in the freezer.

Notes

Use refined coconut oil for a neutral flavor, or unrefined if you prefer a coconut taste. Do not overheat the chocolate to prevent seizing. These are best eaten frozen; if left at room temperature, the coconut oil will melt. For a nut-free version, substitute sunflower seed butter for peanut butter. For a dairy-free version, use coconut oil instead of butter and dairy-free chocolate chips.
