  • 1 teaspoon vanilla extract
  • 1 cup milk chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Crush the cookies into fine crumbs using a food processor or a zip-top bag with a rolling pin.
  2. In a medium bowl, mix the cookie crumbs with melted butter (and sugar if using) until it resembles wet sand.
  3. Press the crust mixture firmly into the bottom and slightly up the sides of an 8-inch pie dish. Set aside.
  4. In a large mixing bowl, whisk together smooth peanut butter, Greek yogurt, powdered sugar, and vanilla extract until completely smooth and emulsified.
  5. Pour the filling over the prepared crust and spread evenly. Tap the dish to release air bubbles.
